• The basis of the dessert in most cases is sponge cakes of their own making. There are recipes that allow you to prepare such a cake without baking, using cookies or purchased biscuit blanks as a basis.

• You can create a cake in the form of a hedgehog in various ways. Cut a droplet shape out of the cakes and fold them in layers, smearing with cream. Mix the crushed scraps of biscuit with the remaining cream and additional products, if any. The resulting mass cover the cake, giving it the appearance of an animal.

• Often from a thin biscuit cake, only the basis for the cake is made, on which the crushed biscuit mixed with cream is laid out. Often, especially when making cake from cookies, crumbs mixed with a creamy mass are the basis from which the hedgehog is fashioned.

• To make the cake really look like a forest resident, he needs needles. They are made from cream placed in a pastry bag or from peeled seeds, inserting the seeds with the tip up. The nose and eyes are well obtained from berries, chocolate dragees or sweets.

Hedgehog sponge cake recipe with chocolate cream

Ingredients:

• 400 gr. Sahara;

• two bags of ripper for the test;

• chicken eggs - 12 pcs.;

• 5 gr. vanilla powder;

• wheat flour - 300 gr.

For cream:

• bar of dark chocolate (100 gr.);

• condensed milk, GOST quality - 1 can;

• sweet cream butter - 1.5 packs.

Additionally:

• one kiwi fruit;

• 150 gr. canned pineapples;

• large banana;

• two round chocolate candies with whole hazelnuts.

Cooking method:

1. Pour six eggs into a deep bowl, add 200 grams of sugar and beat until lush white foam. Then add half the recipe for vanilla powder, a bag of cultivator and, continuing to beat, enter 150 grams of sifted flour.

2. Lay out the bottom and sides of the rounded shape with parchment, grease it with vegetable oil. Pour the prepared dough into a container and place to bake at 180 degrees. After about half an hour, the biscuit will be ready. Remove it from the mold and leave to cool.

3. Make the second biscuit in exactly the same way.

4. While the biscuits are cooling, prepare the cream by whipping the condensed milk with softened butter.

5. Cut the cooled biscuits longitudinally into two parts and cut out a “droplet” shape from each resulting cake. Then fold them in a pile and gently trim them with a sharp knife, and make a slight bevel on the pointed side.

6. Cut the remaining pieces into medium-sized cubes and put them in a bowl.

7. Pineapples cut into small pieces, kiwi and bananas into thin rings. Do not pour the syrup remaining from pineapples, it will come in handy.

8. Put the first cake on a wide dish, soak it with pineapple syrup, and coat with cream. Put pineapple slices on top and cover with the next cake, which is also soaked and smeared. Use bananas as a fruit layer.

9. The third cake, soaked and greased with cream, lay down the kiwi, and the fourth, only soak.

10. Put a few tablespoons of the cream in a small bowl and mix it with a small portion of the melted chocolate, which has cooled down.

11. Mix a little cream with crushed biscuit and stick around the “hedgehog” body with the resulting mass, and coat the muzzle with tinted cream.

12. The rest of the cream mix with the remaining chocolate and squeezing it through a pastry syringe, make needles.

13. Make a nose out of one candy, and carefully cut the second across and attach the halves to the eyelet.

Hedgehog cake without baking cookies

Ingredients:

• a pound of shortbread cookies;

• 100 gram milk chocolate bar;

• a glass of powdered sugar;

• fatty 30% cream - 2 tbsp .;

• half a glass of walnut kernels;

• 3-4 raisins;

• a jar of condensed milk, whole, good quality.

Cooking method:

1. Twist the cookies through a meat grinder. Add finely chopped nuts to the resulting crumbs, pour in the condensed milk, mix everything well.

2. From the cooked mass, form a hedgehog figure and place it for an hour to freeze in the refrigerator.

3. Melt the broken chocolate into pieces by heating in an ordinary water bath and let it cool slowly.

4. Having set the average speed of the mixer, gradually pouring the icing sugar, whip the cream. Mix the cream with half the chilled chocolate and transfer it to a pastry bag.

5. With the remaining chocolate, using a culinary brush, cover the "face" of the hedgehog. Make needles from cream, mouth, eyes and nose - from raisins.

Chocolate cake "Hedgehog"

Ingredients:

• six eggs;

• one and a half glasses of sugar;

• half a glass of dry fresh starch;

• wheat flour - 1 tbsp .;

• two tablespoons of quality cocoa.

In cream:

• 12 tbsp. l condensed white GOSTOVSKAYA;

• 3 tablespoons of dark cocoa powder;

• 300 gr. butter, sweet cream.

For glaze:

• cocoa powder, sugar free - 1 tbsp. l .;

• 30 gr. frozen cream, preferably homemade;

• one and a half tablespoons of sugar;

• sour cream, medium fat - a large spoon.

Additionally:

• three tablespoons of cherry undigested jam;

• 100 gr. peeled dried nuts;

• half a can of condensed milk;

• 2-2.5 dessert spoons of cognac;

• chocolate dragee - 3 pcs.

Cooking method:

1. Twist the flour with cocoa and starch.

2. Break and divide the eggs: squirrels in one bowl and yolks in another.

3. Add half the sugar to the yolks and rub thoroughly until white.

4. At a low mixer speed, whisk the whites in fluffy foam. Then, increasing speed, gradually pour the rest of the sugar. Whisk all the same until the protein mass, when tilted, stops flowing out of the bowl.

5. Lay out a third of the proteins to the yolks and, slowly, gently intervene. Add the flour mixture, gently mix it. Then put the remaining protein mass and, without rushing, stir the dough with folding movements.

6. Place it in a parchment-lined form, flatten on top and set to bake in the oven for half an hour, setting the heat to 180 degrees.

7. Discard the resulting chocolate biscuit very carefully from the mold and place on a wire rack until completely cooled. To prevent the biscuit from soaking, it is recommended to wrap it with a towel and stand for at least 8 hours.

8. Prepare the cream. Beat softened, chopped butter for about a minute with a mixer. Then, without interrupting the process and adding no more than a spoon, enter condensed milk, and at the end, sifted cocoa.

9. Grate sponge cake on a coarse grater.

10. In a wide bowl, put half the creamy mass. Add jam with cognac and, gradually adding sponge cake with finely chopped nuts, mix well. Then, without ceasing to mix, add condensed milk on a spoon. It may be needed even less, the mass should be thick and only slightly viscous, so that it can be easily sculpted from it.

11. Put the cooked biscuit mass on a serving plate and mold a hedgehog figure.

12. Cook the icing. In a thick-walled saucepan, mix cocoa, sour cream, sugar. Add oil and boil, stirring over low heat until saccharines disappear.

13. Apply hot icing with a brush to the “face” of the hedgehog. Apply the rest of the cream to the “torso” in the form of thorns, squeezing it out of a pastry bag. Make the nose and eyes out of dragees.

Sponge cake "Hedgehog" with meringue without baking

Ingredients:

• two purchased sponge cakes;

• a pound of white meringue;

• three tablespoons of cocoa;

• half a glass of sugar;

• five tablespoons of milk;

• half a pack of butter, sweet cream;

• can of boiled condensed milk, standard, tin;

• peeled sunflower seeds;

• beet sugar - 0.5 tbsp.

Cooking method:

1. Beat boiled condensed milk with softened butter.

2. From one cake, cut the base of the hedgehog in the form of a drop and transfer it to a flat plate. Lubricate the cake with cream, spread the meringue on top.

3. Mash the remaining meringue into crumbs, mix with finely chopped nuts and the remaining cream. When adding in small portions, stir in the crumbled biscuit.

4. Put a thick mass on the meringue and give the cake the shape of a hedgehog. If it sticks to your hands, moisten them with water.

5. Prepare the icing. Mix cocoa with sugar, add milk and bring to a boil with minimum heat, but do not boil. Then remove from the stove and mix the oil in the hot glaze, cool.

6. Bring the icing to room temperature and cover the entire cake. When placing seeds of seeds with the pointed side up, make a hedgehog of a needle. Depict eyes and nose from a dragee. Place the finished cake for two hours in the cold.

Cake "Hedgehog" made of biscuit with semolina, with sour cream

Ingredients:

• four eggs;

• a glass of sugar;

• half a glass of flour;

• semolina - 1 glass;

• half a packet of dough ripper;

• 1 gram of vanilla crystals.

For cream:

• fat sour cream, 30% - 400 gr.;

• 100 gr. unrefined sugar;

• cream thickener (for mixing with sour cream).

For registration:

• a glass of fried sunflower grains (peeled);

Cooking method:

1. Stir, lightly whisk, eggs and sugar, add semolina and let stand 10 minutes. Pour flour with a cultivator, vanilla, and knead until smooth.

2. Rub the bottom and walls of a round shape with oil and sprinkle a little with semolina. Put the dough into the mold and bake the cake at 180 degrees, until the match is dry. Cool.
