Pike Ear - General Cooking Principles

Pike is a specific fish. Very often it smells of mud, so it requires careful processing. You can soak the carcass for several hours in cold water, changing the fluid periodically. Then you need to cook the broth. It can be made from bones and head, or boil soup immediately from pieces of fish, it all depends on the selected recipe.

What is added to the ear:

• potatoes, carrots, onions and other vegetables;

• millet, rice and other various cereals;

• herbs, spices.

Wuhu is not cooked with sauté. Vegetable pike ear with smoke

A recipe for a light and fragrant pike fish soup that ennobles with smoke. You can use other parts of the carcass for the broth.

Ingredients

• 6 potatoes;

• 1 pike per 1.5-2 kg;

• 2 onions;

• 2 carrots;

• 1 bunch of dill;

• 1 bunch of green onions;

• laurel, peppercorns;

• 1 bell pepper.

You will also need a few wood chips.

Cooking

1. Cut the washed pike, cut off the head and about 10 cm of the tail. Put in a pan with 3 liters of water, throw one onion, coarsely chopped carrots, laurel and a few peas of pepper. Cooking a saturated fish broth for about 40 minutes. We filter.

2. The rest of the carcass is cut into identical pieces.

3. Peel the potatoes, cut large, pour into the broth. Cook for about ten minutes.

4. Add the fish, bring to a boil and remove the foam from the fish soup.

5. Cut the remaining onion and carrot, run into the pan, put the salt, cook the soup until almost ready.

6. Cut the sweet pepper, toss.

7. At the end, add the hot pepper to taste, add salt.

8. We set fire to the wood chips, let them flare up well and throw in the pan, throw the dill, close the pan and turn it off.

9. Let the ear brew, remove splinters before the spill, add green onions to each plate.

Pike ear with millet

A common and well-known recipe for fish soup with pike, in which millet is added. It blends perfectly with fish, makes the dish more satisfying and gives its own taste. From this number of products, 4-5 servings of the first dish will be obtained.

Ingredients

• 0.7 kg pike;

• 4 tablespoons of millet;

• 0.3 kg of potatoes;

• 0.5 carrots;

• 1 onion;

• 1.7 liters of water

• seasoning.

Cooking

1. Rinse the pike, cut into pieces, pour water and put on the stove.

2. While the fish is boiling, cut the potatoes into small pieces. Peel the onion, cut into cubes, carrot cubes.

3. We catch the moment of boiling, remove the foam from the fish broth and throw the potatoes. After a minute, carrots, followed by a chopped onion head.

4. Salt the ear, boil the vegetables for five minutes.

5. We wash millet, we throw in a pan.

6. We continue to cook the dish further until millet is ready. Since there is a lot of water, it will take about ten minutes.

7. Season the fish ear with laurel, throw the pepper, at the end we try on the salt, add if necessary. Done!

Pike ear with vodka and millet

The recipe of the original soup, in which vodka is added. Although many people practice beer infusion, this is especially true in nature. Vodka does not fundamentally change the taste of the soup, but removes the aroma of tina from it, typical of fish like pike.

Ingredients

• 3 liters of water;

• 1 kg of pike;

• a handful of millet;

• 0.3 kg of potatoes;

• 50 ml of vodka;

• onions and carrots;

• greens, Bulgarian pepper to taste.

Cooking

1. Cut the washed fish, fill the pike with cold water, bring the future ear to a boil and remove the foam. Boil the fish until cooked.

2. Remove the pieces of pike with a slotted spoon in a bowl, strain the broth, pour into a saucepan and re-place on the stove.

3. When boiling, add chopped potato tubers, you do not need to grind it, put large pieces, cook for about ten minutes.

4. This time is enough to cut onions and carrots. In this case, it is undesirable to use a grater.

5. Lay vegetables, throw a handful of washed millet.

6. After boiling, you can add salt to your ear. Cooking another quarter hour.

7. Wuhu do not disassemble pieces, return to the pan.

8. Add chopped bell pepper, after boiling pour in vodka and throw dill.

9. Close the lid, turn off the stove. Let the ear stand for ten minutes and you can serve a fragrant dish with the ear to the table!

Pike ear in a multicooker

The use of a slow cooker in cooking fish soup is an innovation, but it is very convenient and practical.

Ingredients

• 0.8 kg of pike;

• 3-4 medium-sized potatoes;

• 1.5 l of water;

• onion (medium);

• one carrot;

• dill or other greens;

• spices.

Cooking

1. Peel the pike, cut the fillet. Pour the seeds with water, put the quenching mode and cook. Exactly an hour. You can additionally take ridges, heads from other fish, so that the broth becomes more rich.

2. Filter the broth, return to the saucepan, bring the amount to 1.5 liters.

3. We put chopped vegetables in a multicooker pan, an arbitrary form.

4. Cut the pike fillet, which was previously cut, into even slices and lay next to the vegetables.

5. Now the soup needs to be salt and pepper.

6. You can turn on the soup program, but it is better to use the stew again, let the ear cook slowly. Leave for 30 minutes.

7. Open, try, if necessary, then put additional spices. We turn on the heating and deliver the pike ear for another 30 minutes.

Pike ear with rice and tomatoes

A recipe for saturated pike tomato soup with rice added to it. The broth is red, aromatic due to the addition of fresh tomatoes. You can use pasta instead, 2-3 tablespoons are sufficient if it is concentrated.

Ingredients

• 1 kg of pike;

• 1 handful of rice;

• 3 potatoes;

• 1 onion;

• 4 ripe tomatoes;

• 1 red pepper;

• 20 ml of oil;

• 1 large carrot;

• seasonings, herbs.

Cooking

1. Cut the fillet with washed and peeled pike. Throw the rest into a saucepan, pour 2.5 liters of water and send to the stove. When boiling, carefully remove the foam.

2. Filter the finished broth from the seeds, pour it again into the saucepan and re-send to the stove. Let’s boil.

3. Cut the potatoes into slices, onions into small cubes, and carrots into strips. We put it in the pan.

4. After boiling vegetables, put the previously separated pike fillet, cutting it into small pieces. The size is approximately equal to a matchbox.

5. We fall asleep a handful of washed rice.

6. Add salt, cook until tender, but do not allow it to boil actively, make the fire small.

7. Pour oil into the pan, put on the stove.

8. Cut the red bell pepper, put in the butter and lightly fry.

9. Tomatoes can be grated or cut into slices, add and cook together for about five minutes.

10. We shift the tomato mass, boil them all together, but not for long.

11. Put the seasonings, herbs, laurel, turn off the ear, let it brew for a few minutes.

Pike ear with a cock

In fact, to cook this fish soup you can use not only a rooster, but also any parts of a chicken carcass. Soup prepared on broth is much tastier and more aromatic. Millet is used as an additive, but you can take rice.

Ingredients

• 1 liter of chicken stock;

• 4 potatoes;

• 500 g pike fillet;

• 1 onion and the same amount of carrots;

• greens, seasonings;

• 50 g of millet.

Cooking

1. Cut the fillet into slices, pour in 800 ml of water, boil until tender. Strain the broth, pieces are taken out in a plate.

2. Combine 500 ml of fish stock and a liter of chicken broth, put in a saucepan over high heat.

3. When boiling add potatoes.

4. After a minute, start the carrot and onion. We cut them arbitrarily.

5. Add the washed millet, salt and pepper, cook the ear until cooked.

6. At the end, return the fish to the pan, throw the greens, bring to a boil and turn it off.

Quick pike ear (fillet)

The recipe for the simplest and fastest pike ear, which does not require much time and attention. Used fillet.

Ingredients

• 300 g fillet;

• 250 g of potatoes;

• 3 tablespoons of millet or rice;

• 1 carrot;

• a small onion;

• herbs, spices.

Cooking

1. Cut the pike fillet into medium slices, put in 1.5 liters of boiling water, follow and remove the foam from the broth.

2. Cut the potatoes into cubes, do not make large pieces. Grate carrots, chop onions. We wash millet.

3. We put everything together in a pan, over high heat, bring to a boil.

4. Salt, remove the heat to a minimum so that the broth is barely boiling. Close and leave for 30 minutes.

5. In the end, you will need to try the soup, add salt, if necessary, season with herbs.

Pike Ear - Useful Tips and Tricks

• If the fish is covered with mucus and tries to slip out of hands, it is necessary to sprinkle it with salt, rinse after a few minutes with cold water. You can also hold the pike by a clothespin attached to the tail.

• If you do not like the pale color of pike fish soup, you can add some bright seasonings to the pan. Commonly used turmeric, saffron, sweet ground paprika.

• So that the broth does not turn out muddy, and the fish ear does not turn into a mess, you need to cook the dish on a small fire, preventing it from boiling violently. Stirring is often not necessary.

• In addition to onions and carrots, a variety of roots and vegetables can be added to the soup soup, the soup will be tastier.
