But in temperate latitudes, not even the sweetest varieties are an exotic dessert, and even that, thanks to the modern technical capabilities of their transportation and storage. There, under the tropical sun, there is such a variety of varieties that the sweetest fruits do not require special preparation - just eat and enjoy.

Therefore, I would like to find a banana dessert recipe to make unusually tasty and sweet those varieties that are available in a not very gentle climate, especially since bananas are a very useful product.

Banana Dessert - Basic Technological Principles

Dessert is all sweet that the cook’s imagination is capable of: pastries, ice cream, sweets, salads and preserves. To this list you can add sweet drinks, including alcoholic drinks, and much more. Therefore, it will be more correct to talk about the basic principles of preparing a banana dessert in terms of choosing the fruits themselves and choosing the best fruit combinations and other ingredients that will help in creating a sweet composition.

Given that bananas are not particularly lucky with residents of temperate latitudes, from what is available on store shelves, nevertheless, one must be able to choose the best.

If you are lucky, then buy the smallest fruits - they are sweeter, and they are perfect for dessert, even when fresh, as a fruit cut. It is enough to clean them, hold in a solution of water and lemon juice, cut into plastics and lay on a dish, along with other fruits. You do not need to add a lot of sugar to such fruits, and their delicate aroma should not be drowned out with too bright spices. In the distribution network, you can find the following varieties:

Finger bananas - they have a length of not more than 8 cm, bright yellow skin, creamy flesh;

Blue bananas similar in shape and size to the previous variety, but have a pale green peel and a bluish tint. Their flesh has a delicate creamy taste, so in dessert it goes well with ice cream, milkshakes, creams. This variety can be used for soufflé and mousse.

Barro Bananas - short and ribbed fruits with a lemon flavor. In the stage of culinary ripeness, they have a bright yellow peel with a small amount of dark brown spots. The pulp of the fruit has a denser texture and it is easy to make chips from it. This variety is suitable for curing. Barro can also be consumed fresh.

Manzano Bananas have the brightest and most saturated aroma of apples and strawberries only when their peel is completely darkened. It is clear that these fruits are perfectly combined with strawberries, apples - first of all. Their aroma perfectly complements cinnamon, chocolate, creamy taste.

Cavendish Bananas - the most affordable in our area. They are most often found in stores - green (in the stage of technical ripeness) and yellow with brownish spots in a fully mature form, 15-25 cm long. Depending on the degree of maturity, you can make fresh mashed potatoes from them, bake on the grill or add to the salad of fruits and other sweets.

Plantain bananas - large ribbed fruits. In appearance, they differ from Cavendish in that they have longer "noses." They, too, in our area are often sold still green. In a mature form, the banana peel darkens, acquires a brownish-brown color. The variety has a less pronounced aroma, the fruits contain a significant amount of starch and less sugar. It is this variety of bananas that is traditionally cooked in countries where it grows. Plantine is suitable for frying, stewing, preparing desserts.

Banana is not a simple berry, only real gourmets can notice many shades of taste, and make a dessert so that you can notice the delicate taste and appreciate everything.

1. Dessert - eclairs with banana cream

Ingredients:

Table eggs 9 pcs.

Premium flour 220 g

Butter 120 g (+80 g for cream)

Salt 8 g

Coconut milk 200 ml (+ 50 ml for cream)

Bananas (net) 370 g

Lemons (juice and zest) 3 pcs.

Icing sugar 270 g

Saffron 2 g

Chocolate 100 g

Corn starch 70 g

Condensed milk 150 g

Cooking:

Pour 200 ml of milk into the pan, add salt, butter (120 g), saffron; bring the liquid to a boil. Stir in the sifted flour. Boil the dough for 2-3 minutes until thickened, remove the pan from the stove and continue to grind until lumps are removed. After cooling to a temperature of 70-80 ° C, introduce one egg at a time, stir. The finished dough should have a viscous uniform consistency.

Put it in a pastry bag with a large nozzle. Cover the baking sheet with parchment greased with a thin layer of fat.

Squeeze out the dough in the shape of crescents, observing the distance between the semi-finished products, because after baking they will increase in size by 2.5-3 times. The length of one blank for banana cakes should be no more than 6 cm.

Bake convenience foods at 180-200 ° C for no more than thirty minutes. Transfer cooled preparations to a dish, soak at room temperature, covering with a napkin for at least a couple of hours.

Mash the peeled large banana until mashed, sprinkle with lemon juice, mix. Whip the cream butter until white, add to the puree, continuing to whisk. Combine 100 g of powdered sugar with 50 ml of milk, mix and inject the resulting mass into the cream. Using a pastry syringe with a long nozzle, fill the semi-finished dough products with the prepared cream.

Combine the juice and zest of lemons with the remaining powder, add starch and boil the mass with continuous stirring, until thickened. At the end of cooking, add condensed milk and beat the mixture until it cools down to 40 ° С.

Apply icing to the cakes. Melt the chocolate and decorate the bananas with specks.

2. Banana cake - dessert without baking

Ingredients:

Sugar 180 g

2 eggs and 4 yolks

Starch 80 g

Cream (10%) 300 ml + 150 ml (33%)

Bananas 0.7 kg (net)

Shortbread Chocolate Cookies 450 g

Oil 120 g

Chocolate Chip 50 g

5 mg vanilla extract

Cognac 75 ml

Cooking:

Put the cookies in a plastic bag and chop them with a rolling pin. Combine with softened butter, add cognac to the mass, mix. Divide the dough into 3 parts and roll round cakes of the same size.

Combine drinking cream with starch, mix, bring to a boil. Pour the eggs whipped with sugar into a thickened mass and bring to a boil again, continuously stirring the cream over low heat.

Cut the peeled bananas into circles. Put the first cake in a detachable form. Cover it with slices of bananas and pour a third of the custard mousse. Put a second, a layer of bananas, cream. Repeat the operation again. Cover the cake with a film and put in the refrigerator for impregnation for 7-10 hours, in the refrigerator.

After shifting to a dish, garnish with whipped cream and grated chocolate.

3. Banana dessert - souffle with ice cream and fruit

Ingredients:

Ice cream cream 0.5 kg

Apples 2 pcs.

Lemon ½ pcs.

Strawberry jam 100 g

Bananas 3 pcs.

Cranberries and lemon balm leaves - for decoration

Cooking:

From peeled bananas, mash and combine it with ice cream. Stir the mass, place in the freezer to solidify. Cut the peeled apples into slices or cubes, sprinkle with lemon juice so as not to darken.

In high cups, on long legs, put balls of ice cream, sprinkle with slices of apples and cranberries (you can take lingonberries, sea buckthorn). Pour the jam over the dessert and garnish with fresh lemon balm leaves.

4. A cocktail of yogurt, bananas and strawberries for dessert - a sweet breakfast in one minute

Ingredients:

Natural yogurt (or kefir) 200 ml

Banana 1 pc.

Cooking:

Wash dense bananas (technical ripeness), peel, grease with melted butter. Preheat the grill pan, fry the fruits on both sides.

Whip cream with one third of the prepared powder. Wipe the berries (to taste) through a sieve, add 100 g of powder (in equal amounts) to the resulting puree. Bring the fruit mass to a boil, remove the foam and cool. Melt the chocolate. To prevent it from hardening quickly, add a spoonful of milk or cream. To add flavor, you can dilute it slightly with liquor.

Arrange hot fruits in portioned plates, pour with melted chocolate and fruit sauce, put one spoonful of whipped cream next to it, sprinkle with chopped nuts.

6. Banana dessert in Russian - pancakes with raisins

Ingredients:

Bananas peeled 300 g

Lemon juice 60 ml

Sugar - to taste

Yogurt (or kefir) 100 ml

Soda 10 g

Eggs 1 ½ pcs.

Raisins 150 g

Flour 140 g

Cooking Oil

Cooking:

Make banana puree, add lemon juice, washed and steamed raisins, yogurt, eggs, and beat the liquid mass well. Combine the sifted flour with soda and sugar, knead a uniform dough. Cover it with a film for 15-20 minutes, leave at room temperature.

Fry the fritters as usual. Serve with jam, berry syrup and whipped cream. You can decorate the dish with fresh berries or slices of peeled apples soaked in lemon solution.

Bananas, like apples, are oxidized when peeled, and their surface acquires an ugly red or brown color. To prevent this from happening, always dip peeled and chopped fruits in acidified water. For this purpose, you can use fresh lemon juice or a ten percent solution of citric acid. Also add acid in banana puree.

Bananas are very useful for people suffering from diseases of the cardiovascular system, nervous disorders - they are rich in potassium and magnesium. At the same time, some varieties of fruits have a high starch content, which is not very favorable for people with metabolic problems. If the bananas are cooked, the starchy substances in them are partially destroyed, but potassium and magnesium still remain.
