With it you can cook more than 100 dishes and pastries, almost all of them are light and dietary. Cottage cheese itself is a wonderful breakfast or dinner, combined with jam, sour cream, cream, milk, fruits and berries. Everyone can choose for themselves something to their taste.

Salted cottage cheese is also good with greens and vegetables. Curd dough is very tender, soft, a lot of goodies can be baked from it. Most importantly, it does not require separate processing and is prepared very quickly.

Curd dough - product preparation

How to make cottage cheese? Skimmed milk or yogurt is heated in a water bath and when the mass is “curdled”, clots and whey are separated. The mass is suspended in gauze to glass moisture. The more thoroughly it is wrung out, the more crumbly the curd turns out. But the cottage cheese dough is good - you can add cottage cheese of any quality to it, and even leftovers that are on the verge of expiration date. Of course, the best dough is obtained from fresh, non-acidic cottage cheese. The high quality of the product is characterized by a sweet taste and a delicate-oily consistency.

Recipe 1: Curd pastry for rolls

According to this recipe, you can bake such bright and beautiful rolls, everyone will be delighted. Sprinkle them with colored coconut flakes, better than bright colors, even those who don’t really like the coconut flavor will gladly eat the curd version.

Ingredients: cottage cheese (250 grams), sugar (100 grams), flour (280 grams), baking powder, egg (1 pc), butter (50 grams).
Filling: coconut, sugar, cinnamon, vegetable oil.

Cooking method

Sift the flour and mix it with baking powder. Mix melted butter with cottage cheese and pour in flour. Beat the egg with sugar, you can with a mixer. Mix all the ingredients and knead the dough. Leave it to rest for 30 minutes in the refrigerator. Filling: place coconut flakes in a small bowl and grind with three tablespoons of sugar. Sprinkle flour on the cutting surface and roll out the dough in the form of a rectangular layer. Lubricate with a brush with vegetable oil, spread and smooth the filling over the entire surface.

We turn the roll and cut into pieces 2 cm thick. The second part of the dough is done in the same way, but the sugar mixed with cinnamon acts as the filling. We spread the resulting spirals on a baking sheet covered with parchment paper. Since baking products increase in volume, leave space on the baking sheet. Bake in the oven at 180 degrees for about 15-20 minutes. If you like more sweet pastries, sprinkle the finished rolls with icing sugar.

Recipe 2: Curd Dough for Apple Pie

Ingredients:

Dough: cottage cheese (250 grams), vegetable oil (6 tablespoons), flour (1-2 glasses), eggs (2 pcs), soda (half a spoon), sugar (4 tablespoons).

Filling: apples (2 pcs), sugar (2 tablespoons), a little sour berries, frozen cranberries, lingonberries, pitted cherries.

Cooking method

Beat eggs with sugar and add the crushed curd. Mix vegetable oil with mass and rub well again. Pour flour and knead the dough. We interfere with soda in flour during sifting. Set aside some dough to decorate the cake. We roll out the dough in the form of a flat cake, put it in a shape so that the sides form.

Filling: cut apples into slices and mix with sugar. From the thawed berries, drain the juice and spread them on top of the apples, sprinkle with sugar. We lay the strips of dough on top and form a "grate". Preheat the oven to 180 degrees and bake for 30-40 minutes. Before cutting the finished cake, cool it well.

Recipe 3: Curd Dough for Buns

Soft and surprisingly tasty buns are obtained without any filling. It’s simple and quick, especially if you find the cottage cheese leftovers in the refrigerator - and the product is attached, and the dish is ready. You just have to add margarine and flour, and some sugar for the filling.

Ingredients: cottage cheese (400 grams), margarine (200 grams), soda (half a teaspoon), flour (3.5 cups), salt, vanillin, sugar.

Cooking method

Grind the cottage cheese and add the melted margarine. We mix everything well, a little salt (on the tip of the knife). To extinguish soda with vinegar. Pour into the sifted flour and mix everything. Knead the dough - it turns out soft and sticks a little to your hands. It doesn’t matter - we leave it for ripening - put half in the freezer, divide the second into 10 lumps and roll it into circles 5 mm thick.

Pour a spoonful of sugar mixed with vanilla in the middle. We turn in half, then again in half - we get puffed triangles with sugar inside. We pinch the edges and spread on a baking sheet, grease with vegetable oil on top and sprinkle with poppy seeds or cinnamon. Bake rolls at 180 degrees for about 30 minutes. Leave the ready-made golden rolls under the napkin for 10 minutes, so that they become soft and lush.

Curd dough - useful tips from experienced chefs

There are an infinite number of cottage cheese pastry recipes with other ingredients. If you imagine the technology, you can make recipes yourself, of those products that you have at home.

Imagine how beautiful and sweet cottage cheese pastries with beets can turn out: half a kilogram of cottage cheese, 300 grams of beets, sour cream ¾ cup, 2 eggs, sugar butter and semolina - two tablespoons each. Finely grated beets are mixed with cottage cheese, then everything is according to the recipe for a pie or rolls.

Another option: a dessert of cottage cheese puff with brown bread. Skip the cottage cheese and brown bread separately through a meat grinder. Mix cottage cheese with sugar and whipped cream and stir. Mash 2 baked apples. In a vase we spread layers of cottage cheese, bread, applesauce with sugar, again a layer of black bread. You don’t even need to cook this dish, just serve it with milk.
